Cooking With Fresh Coconut Milk

I’ve learnt how to get the milk out of coconuts without using a giant knife, so the other night I cooked with fresh coconut milk, which is obviously a novelty for me because it’s not normal in England. Look!


I put kidney beans in the coconut milk then fried some onions and put them in, chopped some tomatoes and put them in with some salt, curry powder and Bocas Spicy Sauce (a ridiculously spicy red/orange sauce that’s on every table in every restaurant and probably every house in Bocas). I ate it with rice and fried plantain:


Loads of people buy canned coconut milk here which costs twice as much as a coconut (coconuts are 65c) and I have no idea why!
